Originating from the beautiful island of Zanzibar, this aromatic rice dish reflects centuries of Swahili, Arab, Persian, and Indian culinary influences. It features tender marinated beef, chicken, or goat layered with fragrant basmati rice and infused with an exquisite blend of spices including cinnamon, cloves, cardamom, cumin, coriander, turmeric, and garam masala.
Unlike many other biryani recipes, Zanzibari Biryani is known for its deeply flavored meat gravy and delicately spiced rice that are cooked separately before being layered together and steamed. The result is fluffy, aromatic rice and succulent meat in every bite. Traditionally served with kachumbari (fresh tomato and onion salad), cucumber raita, and hot chili sauce, this authentic Tanzanian biryani is perfect for Eid, weddings, family gatherings, holidays, or an unforgettable weekend dinner.
Cooking Method
In a large bowl, combine the yogurt, lemon juice, ginger paste, garlic paste, salt, and black pepper.
Add the meat and mix well. Cover and marinate for at least 1 hour, preferably overnight.
Heat the vegetable oil in a large pot over medium heat.
Cook the sliced onions until golden brown.
Add the tomatoes and tomato paste, cooking until softened.
Stir in the cumin, coriander, turmeric, paprika, garam masala, cinnamon stick, cardamom, cloves, bay leaves, and nutmeg.
Add the marinated meat and cook for 8–10 minutes until lightly browned.
Pour in the stock, cover, and simmer for 45–60 minutes until the meat is tender and the gravy thickens.
Meanwhile, rinse the basmati rice until the water runs clear.
Bring 6 cups of water to a boil with salt and butter or ghee.
Add the rice and cook until about 80% done, then drain.
In a heavy-bottomed pot, spread a layer of rice, followed by a layer of meat and gravy.
Repeat the layers until all the rice and meat are used.
Cover tightly and cook over very low heat for 20–25 minutes, allowing the flavors to meld.
Gently fluff the rice with a fork before serving.
Garnish with fried onions, fresh cilantro, mint, raisins, and toasted cashews.
