Tanzanian Ndizi Nyama Recipe | Traditional Plantain and Beef Stew

 Ndizi Nyama is a classic comfort dish from Tanzania, especially popular in the northern regions of the country. This hearty recipe combines tender beef with green plantains (cooking bananas), tomatoes, onions, garlic, and a fragrant blend of spices, all simmered together until the flavors meld into a rich and satisfying stew. The plantains absorb the savory broth while remaining soft and creamy, making every bite wholesome and delicious. 

Authentic Tanzanian Ndizi Nyama is a staple family meal often served for lunch or dinner. Packed with protein, vegetables, and naturally filling plantains, this one-pot dish is both nutritious and comforting. It pairs perfectly with a fresh kachumbari salad, chapati, or steamed greens, making it a wonderful introduction to the rich flavors of East African cuisine. 

Cooking Method


  1.  Heat the vegetable oil in a large pot over medium-high heat. 
  2.  Add the beef cubes and brown on all sides. 
  3.  Stir in the chopped onion and cook until softened. 
  4.  Add the garlic and ginger, cooking for 1 minute. 
  5.  Mix in the chopped tomatoes and tomato paste, then cook until the tomatoes break down. 
  6.  Add the curry powder, paprika, cumin, salt, and black pepper. 
  7.  Pour in the beef broth and bring to a boil. 
  8.  Reduce the heat, cover, and simmer for 45 minutes, or until the beef begins to soften. 
  9.  Add the sliced green plantains and stir gently. 
  10.  Continue cooking for 20–25 minutes until the plantains are tender and the stew has thickened. 
  11.  Taste and adjust the seasoning if needed. 
  12.  Garnish with chopped cilantro or parsley and serve hot.
