Ginataang bilo-bilo is a beloved traditional dessert from the Philippines, known for its rich, creamy texture and comforting tropical flavors. This classic Filipino delicacy features soft, chewy glutinous rice balls (bilo-bilo) gently simmered in sweet coconut milk with saba bananas, sweet potatoes, taro, jackfruit, tapioca pearls, and sugar. Every spoonful offers a delightful combination of creamy coconut broth, tender root vegetables, and chewy rice dumplings, making it one of the country's most cherished comfort desserts.

Often enjoyed as an afternoon snack (merienda), dessert, or special treat during family gatherings and celebrations, Ginataang Bilo-Bilo showcases the natural sweetness of fresh ingredients without being overly sugary. The rich coconut milk provides a velvety base, while the bananas and jackfruit add fruity sweetness and aroma. Tapioca pearls and glutinous rice balls create a fun, chewy texture that makes this dessert both unique and satisfying.

This homemade Ginataang Bilo-Bilo recipe is simple to prepare using everyday ingredients and can be served warm on rainy days or slightly chilled for a refreshing tropical dessert. Whether you're exploring authentic Filipino cuisine or looking for a comforting coconut-based dessert, this recipe is sure to become a family favorite

Cooking Method

  1.  Combine the glutinous rice flour and water to form a soft dough.
  2.  Roll the dough into small bite-sized balls.
  3.  In a pot, combine the coconut milk, coconut cream, and water. Bring to a gentle simmer over medium heat.
  4.  Add the diced sweet potato and taro, cooking for 10–12 minutes until nearly tender.
  5.  Stir in the sliced saba bananas and cook for another 5 minutes
  6.  Carefully add the rice balls and simmer until they float to the surface, about 5–7 minutes
  7.  Add the cooked tapioca pearls, jackfruit, sugar, and salt.
  8.  Simmer for another 3–5 minutes, stirring gently to avoid breaking the rice balls.
  9.  Remove from the heat and let the dessert rest for a few minutes before serving.
  10.  Serve warm or chilled, garnished with toasted coconut flakes if desired.
