Tuscan Bean Stew
Tuscan Bean Stew is a hearty, rustic Italian-inspired dish made with creamy white beans, fresh vegetables, tomatoes, and aromatic herbs simmered in a rich vegetable broth. This comforting one-pot meal is naturally vegan, packed with plant-based protein and fiber, and perfect for cozy dinners or meal prep. Serve it with crusty bread for a wholesome and satisfying meal.
Cooking Method
- Heat the olive oil in a large pot over medium heat.
- Add the onion, carrots, and celery. Sauté for 6–8 minutes until softened.
- Stir in the garlic and cook for 1 minute until fragrant.
- Add the tomato paste and cook for another minute.
- Stir in the diced tomatoes, cannellini beans, vegetable broth, oregano, thyme, Italian seasoning, bay leaf, and red pepper flakes.
- Bring the stew to a boil, then reduce the heat and simmer for 20–25 minutes.
- Add the kale or spinach and cook for another 5 minutes until wilted.
- Remove the bay leaf. For a creamier texture, mash a small portion of the beans directly in the pot or blend 1–2 cups of the stew and return it to the pot.
- Stir in the lemon juice and fresh parsley. Adjust seasoning with salt and black pepper.
- Serve hot with crusty bread and garnish with fresh basil, vegan Parmesan, and a drizzle of olive oil if desired.
