Cooking Method
- Wash the Aleppo pine seeds thoroughly.
- Grind the pine seeds into a fine paste using a food processor or grinder.
- Mix the ground paste with water and strain through a fine cloth or sieve to extract the dark pine milk.
- Pour the pine milk into a large saucepan.
- Whisk together the flour with a small amount of cold pine milk until smooth.
- Add the flour mixture and sugar to the saucepan.
- Cook over medium heat, stirring constantly for 25–30 minutes until the pudding thickens.
- Stir in the vanilla extract and divide the pudding among serving bowls.
- Let the pudding cool completely.
- Meanwhile, prepare the custard by whisking together the milk, sugar, cornstarch, egg yolks, and vanilla.
- Cook over medium heat, stirring continuously until smooth and thick.
- Allow the custard to cool slightly, then spread a generous layer over each bowl of pine pudding.
- Decorate with pistachios, almonds, pine nuts, hazelnuts, candied fruits, sugar pearls, and raisins in attractive patterns.
- Refrigerate for at least 3–4 hours before serving.
