 Assidat Zgougou is one of the most iconic desserts in Tunisia, traditionally prepared to celebrate the Mawlid al-Nabi (Prophet Muhammad's Birthday). This rich and elegant dessert is made from Aleppo pine seeds (Zgougou), which are ground into a flavorful paste and cooked into a silky pudding. The pudding is topped with a creamy vanilla custard and beautifully decorated with nuts, candies, and dried fruits, creating a festive dessert that is both visually stunning and delicious. 

Authentic Tunisian Assidat Zgougou is known for its earthy, nutty flavor, smooth texture, and decorative presentation. Although it takes time to prepare, the result is a luxurious dessert that's perfect for religious celebrations, holidays, family gatherings, and special occasions. Every spoonful combines the richness of pine seed pudding with creamy custard and crunchy toppings for a truly unforgettable Tunisian treat. 

Cooking Method


  1.  Wash the Aleppo pine seeds thoroughly. 
  2.  Grind the pine seeds into a fine paste using a food processor or grinder. 
  3.  Mix the ground paste with water and strain through a fine cloth or sieve to extract the dark pine milk. 
  4.  Pour the pine milk into a large saucepan. 
  5.  Whisk together the flour with a small amount of cold pine milk until smooth. 
  6.  Add the flour mixture and sugar to the saucepan. 
  7.  Cook over medium heat, stirring constantly for 25–30 minutes until the pudding thickens. 
  8.  Stir in the vanilla extract and divide the pudding among serving bowls. 
  9.  Let the pudding cool completely. 
  10.  Meanwhile, prepare the custard by whisking together the milk, sugar, cornstarch, egg yolks, and vanilla. 
  11.  Cook over medium heat, stirring continuously until smooth and thick. 
  12.  Allow the custard to cool slightly, then spread a generous layer over each bowl of pine pudding. 
  13.  Decorate with pistachios, almonds, pine nuts, hazelnuts, candied fruits, sugar pearls, and raisins in attractive patterns. 
  14.  Refrigerate for at least 3–4 hours before serving.
