Tunisian Bambalouni is a famous Tunisian street food dessert made from soft yeast dough that is deep-fried until golden and coated with sugar. Crispy on the outside and light, airy, and fluffy on the inside, Bambalouni is one of Tunisia's most beloved sweet treats and is commonly enjoyed for breakfast, dessert, or as an afternoon snack.

The dough is prepared with simple pantry ingredients including flour, yeast, sugar, water, and olive oil, then allowed to rise until light and airy. Each dough portion is gently stretched into a ring before being fried until beautifully puffed and golden brown. While still warm, the donuts are generously coated in granulated sugar, creating a crisp, sweet exterior.

Often enjoyed fresh from street vendors along Tunisia's coastal towns, Bambalouni pairs wonderfully with mint tea, coffee, or fresh fruit juice. Some modern variations are filled with chocolate, jam, or custard, although the traditional version is simply dusted with sugar.

Cooking Method


  1. In a large bowl, combine the flour, yeast, sugar, and salt.
  2. Add the warm water and olive oil, then mix until a soft, slightly sticky dough forms.
  3. Knead the dough for 8–10 minutes until smooth and elastic.
  4. Cover the bowl with a clean towel and let the dough rise in a warm place for about 1 hour, or until doubled in size.
  5. Punch down the dough and divide it into 8 equal portions.
  6. Gently stretch each portion into a round disc and create a hole in the center to form a ring.
  7. Heat the vegetable oil to 350°F (175°C) in a deep fryer or heavy-bottomed pot.
  8. Fry the dough rings for 2–3 minutes per side, until golden brown and puffed.
  9. Remove with a slotted spoon and drain briefly on paper towels.
  10. While still warm, coat each Bambalouni generously with granulated sugar and serve immediately.
