Cooking Method


  1.  Hollow out the zucchini, eggplants, tomatoes, and bell peppers, leaving sturdy walls. 
  2.  In a large bowl, combine the rice, onion, grated tomatoes, tomato paste, parsley, dill, cilantro, garlic, olive oil, cumin, paprika, salt, and black pepper. 
  3.  Stuff each vegetable about ¾ full, leaving room for the rice to expand during cooking. 
  4.  Arrange the stuffed vegetables tightly in a large pot. 
  5.  Mix the tomato juice, broth, tomato paste, and olive oil, then pour over the vegetables until mostly covered. 
  6.  Place a heatproof plate over the vegetables to keep them in place while cooking. 
  7.  Bring to a gentle boil, then reduce the heat and simmer for 50–60 minutes until the vegetables are tender and the rice is fully cooked. 
  8.  Remove from the heat and let the Mahshi rest for 10 minutes before serving. 
  9.  Carefully transfer to a serving platter. 
  10.  Garnish with fresh parsley and serve with lemon wedges or plain yogurt if desired.
