Cooking Method


  1. Mix the sweet soy sauce, light soy sauce, oyster sauce, chili sauce, curry powder, sugar, and white pepper in a small bowl. Set aside.
  2. Heat the vegetable oil in a large wok over high heat.
  3. Add the garlic and onion, then stir-fry for about 1 minute until fragrant.
  4. Add the chicken or shrimp and cook until nearly done.
  5. Push the ingredients to one side of the wok and pour in the beaten eggs. Scramble until cooked.
  6. Add the tomatoes, cabbage, and blanched noodles, tossing everything together.
  7. Pour the prepared sauce over the noodles and stir-fry for 2–3 minutes until evenly coated.
  8. Add the bean sprouts and green onions, then stir-fry for another minute while keeping the vegetables crisp.
  9. Taste and adjust the seasoning if needed.
  10. Serve immediately with fresh lime wedges and crispy fried shallots on top.
