Tanzanian Mchuzi wa Kuku Recipe | Traditional Swahili Chicken Curry

 Mchuzi wa Kuku is a comforting and flavorful dish enjoyed throughout Tanzania. This traditional Swahili chicken curry features tender chicken simmered in a rich sauce made with tomatoes, onions, garlic, ginger, coconut milk, and a fragrant blend of East African spices. The creamy coconut sauce perfectly complements the savory chicken, creating a hearty meal that's both satisfying and full of authentic coastal flavors. 

Popular for family meals, weekend gatherings, and festive occasions, Tanzanian Mchuzi wa Kuku is commonly served with steamed rice, chapati, ugali, or pilau. Easy to prepare and packed with protein, this delicious curry is a wonderful introduction to the rich culinary traditions of Tanzania. 

Cooking Method


  1.  Heat the vegetable oil in a large pot over medium heat. 
  2.  Add the chopped onion and cook until soft and translucent. 
  3.  Stir in the garlic and ginger, cooking for 1 minute until fragrant. 
  4.  Add the chicken pieces and brown them on all sides. 
  5.  Mix in the chopped tomatoes and tomato paste, cooking until the tomatoes soften. 
  6.  Stir in the curry powder, paprika, turmeric, salt, and black pepper. 
  7.  Pour in the coconut milk and mix well. 
  8.  Cover and simmer over low heat for 30–35 minutes, stirring occasionally, until the chicken is tender and fully cooked. 
  9.  Taste and adjust the seasoning if needed. 
  10.  Garnish with chopped fresh cilantro before serving.
