Authentic Tanzania Wali na Maharage Recipe (Traditional East African Rice and Beans)

Cooking Method
- If using dried beans, soak them overnight. Drain, rinse, and cook in fresh water for 45–60 minutes, or until tender. Drain and set aside.
- Rinse the rice under cold water until the water runs clear.
- Bring the water and salt to a boil in a saucepan. Add the rice, reduce the heat to low, cover, and cook for 15–18 minutes until tender. Fluff with a fork and keep warm.
- Heat the vegetable oil in a large saucepan over medium heat.
- Add the chopped onion and cook for about 5 minutes until soft and translucent.
- Stir in the garlic and cook for 1 minute until fragrant.
- Add the diced tomatoes and tomato paste. Cook for 5–7 minutes until the tomatoes break down into a rich sauce.
- Stir in the cumin, paprika, turmeric, black pepper, and salt. Cook for 1 minute.
- Add the cooked beans, vegetable stock, and coconut milk if using. Simmer for 10–15 minutes until the stew thickens and the flavors blend together.
- Garnish with chopped cilantro and serve the bean stew over steamed rice. Enjoy with Kachumbari, avocado, grilled meat, or fried fish if desired.
