Cooking Method
Heat the oil or ghee in a karahi or large skillet over medium-high heat.
Add the chicken and cook until lightly browned.
Stir in the ginger-garlic paste and sauté for 1–2 minutes.
Add the chopped tomatoes and cook until they soften completely.
Mix in the red chili powder, turmeric, coriander, cumin, and salt.
Cook until the oil begins to separate from the tomato mixture.
Cover and simmer for 20–25 minutes, stirring occasionally, until the chicken is tender.
Add the green chilies and garam masala, then cook for another 3–5 minutes.
Garnish with julienned ginger and chopped cilantro.
Serve hot with naan, roti, or steamed basmati rice.
