 Paya is a traditional delicacy in Pakistan, renowned for its rich, flavorful broth and tender, slow-cooked meat. Prepared with goat, lamb, or beef trotters, aromatic spices, onions, garlic, ginger, and a long simmering process, Pakistani Paya develops a deep, comforting flavor and silky texture. It is especially popular for breakfast, festive occasions, Ramadan, and family gatherings. 

This authentic recipe is best served with fresh naan, tandoori roti, or steamed rice. The slow cooking allows the collagen from the trotters to create a naturally thick and hearty curry that's both nourishing and satisfying. 

Cooking Method


  1.  Heat the oil or ghee in a large pot or pressure cooker. 
  2.  Fry the onions until golden brown. 
  3.  Add the ginger-garlic paste and cook for 1 minute. 
  4.  Stir in the red chili powder, turmeric, coriander, cumin, black pepper, and salt. 
  5.  Add the cleaned trotters and cook for 8–10 minutes, coating them well with the spices. 
  6.  Pour in the water and bring to a boil. 
  7.  Cover and simmer for 4–5 hours, or pressure cook for 60–75 minutes, until the trotters are very tender and the broth is rich. 
  8.  Stir in the garam masala and simmer for another 10 minutes. 
  9.  Garnish with ginger, cilantro, green chilies, and lemon wedges. 
  10.  Serve hot with naan, tandoori roti, or steamed rice.

2 tbsp ginger-garlic paste , 2 tsp red chili powder , 1 tsp turmeric powder
