 Iranian Zereshk Polo is a classic Persian dish featuring fragrant basmati rice layered with saffron and topped with sweet-tart barberries (zereshk) and tender saffron-infused chicken. The vibrant barberries provide a refreshing burst of tangy flavor that perfectly complements the aromatic rice and juicy chicken. Cooking Method


  1. Rinse and soak the basmati rice for 30 minutes, then cook until almost tender and drain.
  2. Season the chicken with salt, pepper, and turmeric.
  3. Heat the olive oil and sauté the onion until golden. Add the garlic and cook for 30 seconds.
  4. Brown the chicken on both sides, then add the chicken broth. Cover and simmer for 30–35 minutes until fully cooked.
  5. In a small pan, melt the butter and gently sauté the barberries with the sugar for 1–2 minutes. Do not overcook.
  6. Mix half of the saffron water with a portion of the cooked rice.
  7. Layer the white rice and saffron rice on a serving platter.
  8. Top with the sautéed barberries and drizzle with the remaining saffron water.
  9. Arrange the chicken alongside or over the rice.
  10. Garnish with pistachios and almond slivers if desired, and serve hot.
