Cooking Method
Heat the oil or ghee in a large pot and fry the cumin seeds until fragrant.
Add the onions and cook until golden brown.
Stir in the garlic and ginger, then sauté for 1 minute.
Add the meat and cook until browned on all sides.
Mix in the tomatoes, coriander powder, turmeric, red chili powder, and salt. Cook until the tomatoes soften.
Pour in the water, cover, and simmer for 50–60 minutes, or until the meat becomes tender.
Add the potatoes and cook for 20–25 minutes, until the potatoes are soft and the gravy thickens.
Sprinkle the garam masala and simmer for another 5 minutes.
Garnish with fresh cilantro, green chilies, and julienned ginger.
Serve hot with naan, chapati, roti, or steamed basmati rice.
