Cooking Method


  1.  Cook the rice noodles according to the package instructions, then drain and set aside. 
  2.  Heat the vegetable oil in a large pot over medium heat. 
  3.  Sauté the onion until soft, then add the garlic and ginger. 
  4.  Stir in the laksa paste, turmeric, and curry powder, cooking for 2–3 minutes until fragrant. 
  5.  Add the lemongrass and chicken stock, then bring to a gentle boil. 
  6.  Stir in the coconut milk, fish sauce, sugar, and salt. 
  7.  Simmer for 10–15 minutes to develop the flavors. 
  8.  Add the cooked shrimp or chicken and heat through for 3–4 minutes. 
  9.  Divide the cooked noodles among serving bowls. 
  10.  Ladle the hot laksa broth and seafood or chicken over the noodles. 
  11.  Top with bean sprouts, boiled eggs, fresh cilantro, fried shallots, and a squeeze of lime juice. 
  12.  Serve immediately while hot.
