South Korea Jajangmyeon is a beloved Korean-Chinese noodle dish featuring thick wheat noodles topped with a rich, savory black bean sauce made from chunjang (Korean black bean paste), diced pork, onions, zucchini, and potatoes. Originally introduced by Chinese immigrants, Jajangmyeon has become one of South Korea's most popular comfort foods, commonly enjoyed for lunch, dinner, and special occasions such as Black Day (April 14). Its deep umami flavor, hearty vegetables, and silky sauce make it a satisfying meal loved by people of all ages.
The black bean sauce is stir-fried to develop its rich flavor before being simmered with vegetables and pork until thick and glossy. Served over freshly cooked noodles and garnished with cucumber, Jajangmyeon delivers the perfect balance of savory, slightly sweet, and earthy flavors.
Cooking Method
- Cook the noodles according to the package instructions. Drain and set aside.
- Heat the oil in a large pan and stir-fry the chunjang for 1 minute. Remove and set aside.
- In the same pan, cook the pork until lightly browned.
- Add the onion, potato, zucchini, and garlic. Cook until slightly softened.
- Stir in the fried black bean paste, soy sauce, sugar, and water or stock.
- Simmer for 10–15 minutes until the vegetables are tender.
- Stir in the cornstarch slurry and cook until the sauce thickens.
- Pour the hot black bean sauce over the cooked noodles.
- Garnish with julienned cucumber and serve immediately.
