 Tonkotsu Ramen is one of Japan's most famous and indulgent ramen varieties, originating from the Fukuoka region on the island of Kyushu. Renowned for its rich, creamy, and intensely flavorful broth, Tonkotsu Ramen is made by slowly simmering pork bones for many hours until the collagen, marrow, and gelatin are fully extracted. The result is a silky white broth with remarkable depth, paired with springy ramen noodles, tender slices of chashu pork, soft-boiled marinated eggs, green onions, wood ear mushrooms, and nori seaweed. 

Unlike soy-based or miso ramen, Tonkotsu's signature flavor comes entirely from the slow-cooked pork bones. The broth develops a luxurious texture and rich umami taste that coats every strand of noodle. Cooking Method


Prepare the Broth

 

  1.  Place the pork bones in a large pot and cover with water. 
  2.  Bring to a rolling boil for 10 minutes, then drain and rinse the bones thoroughly to remove impurities. 
  3.  Clean the pot and return the bones. 
  4.  Add fresh water, onion, garlic, ginger, and green onions. 
  5.  Bring to a vigorous boil, then continue boiling (not just simmering) for 10–12 hours, adding water as needed to keep the bones submerged. 
  6.  Stir occasionally. The broth will gradually become creamy and milky white. 
  7.  Strain the broth through a fine sieve, discarding the solids. 


Assemble the Ramen

 

  1.  Stir the soy sauce, mirin, sake, and sesame oil into the hot broth. 
  2.  Cook the ramen noodles according to the package instructions. 
  3.  Divide the noodles among serving bowls. 
  4.  Pour the hot Tonkotsu broth over the noodles. 
  5.  Top with chashu pork, soft-boiled eggs, mushrooms, nori, green onions, sesame seeds, and pickled ginger. 
  6.  Finish with chili oil if desired and serve immediately.
