Cooking Method
- Bring a large pot of water to a boil and carefully blanch the cabbage for 8–10 minutes, removing the softened leaves as they loosen. Trim the thick stems from each leaf.
- Heat the vegetable oil in a skillet and sauté the onion until translucent. Add the garlic and cook for another minute.
- In a large bowl, combine the ground pork, ground beef, cooked rice, sautéed onion, garlic, paprika, dill, thyme, salt, and black pepper.
- Place about 2–3 tablespoons of filling in the center of each cabbage leaf. Fold in the sides and roll tightly.
- Arrange the cabbage rolls seam-side down in a large baking dish or Dutch oven.
- In a saucepan, combine the tomato sauce, broth, tomato paste, butter, sugar (if using), salt, and pepper. Simmer for 5 minutes.
- Pour the sauce evenly over the cabbage rolls.
- Cover tightly with a lid or foil and bake at 350°F (175°C) for 1½–2 hours, or simmer gently on the stovetop until the cabbage is tender.
- Allow the Holubtsi to rest for 10 minutes before serving.
- Garnish with sour cream and fresh dill, and serve hot.
