Cooking Method
- Heat the olive oil in a large pot over medium-high heat. Brown the lamb on all sides, then remove and set aside.

- Return the lamb to the pot. Stir in the crushed tomatoes, stock, coriander, cumin, paprika, turmeric, caraway, salt, and black pepper.
- Bring to a boil, then reduce the heat, cover, and simmer for 1 hour.
- Add the carrots, potatoes, turnip (if using), chickpeas, zucchini, and pumpkin. Simmer for another 25–30 minutes, or until the vegetables and lamb are tender.
- Meanwhile, prepare the couscous according to the package directions or steam it traditionally until light and fluffy.
- Fluff the cooked couscous with a fork and transfer it to a large serving platter.
- Arrange the lamb and vegetables over the couscous.
- Ladle the flavorful broth generously over the dish, serving extra broth on the side if desired.
- Serve hot with additional harissa for extra spice.
