Authentic Iranian Dizi (Abgoosht) Recipe | Traditional Persian Lamb & Chickpea Stew
Iranian Dizi, also known as Abgoosht, is a traditional Persian stew made with tender lamb, chickpeas, white beans, potatoes, tomatoes, onions, and fragrant spices. Slow-cooked for hours, this hearty dish develops a rich, savory broth and melt-in-your-mouth meat. Traditionally, the broth is served first with Persian bread, while the cooked meat, beans, and vegetables are mashed together into a thick mixture called Goosht Koobideh. Cooking Method
Place the lamb, chickpeas, white beans, onion, garlic, tomatoes, tomato paste, turmeric, black pepper, dried limes, and water into a large pot.
Bring to a boil and skim off any foam.
Reduce the heat to low, cover, and simmer for 2 hours.
Add the potatoes and continue cooking for 45–60 minutes, until the meat is very tender and the beans are fully cooked.
Season with salt during the last 15 minutes of cooking.
Remove the meat, beans, and vegetables from the broth.
Mash the meat, beans, potatoes, and tomatoes together until thick and well combined.
Serve the broth separately with torn Persian bread.
Serve the mashed meat mixture alongside the broth.
Garnish with fresh herbs and enjoy with additional flatbread.
