Xiaolongbao Recipe | Authentic Chinese Soup Dumplings
Xiaolongbao, also known as Chinese Soup Dumplings, are one of the most celebrated dishes in Chinese cuisine. Originating from the Jiangnan region, particularly Shanghai, these delicate steamed dumplings are famous for their thin wrappers, juicy pork filling, and rich, flavorful broth hidden inside each dumpling. The secret to authentic Xiaolongbao is the addition of chilled pork aspic (gelatinized broth) mixed into the filling. Cooking Method
Prepare the Dough
- Mix the flour and salt in a large bowl.
- Gradually add the warm water while stirring until a rough dough forms.
- Knead the dough for 10 minutes until smooth and elastic.
- Cover and let it rest for 30 minutes.
Prepare the Filling
- In a mixing bowl, combine the ground pork, green onions, garlic, ginger, soy sauce, Shaoxing wine, sesame oil, sugar, white pepper, and salt.
- Mix until the filling becomes slightly sticky.
- Gently fold in the chilled pork aspic cubes.
Assemble the Dumplings
- Divide the dough into small portions and roll each into a thin 3½-inch circle.
- Place about 1 tablespoon of filling in the center.
- Carefully pleat the edges while rotating the wrapper until the dumpling is completely sealed at the top.
Steam
- Line a bamboo steamer with parchment paper or cabbage leaves.
- Arrange the dumplings with space between each.
- Steam over boiling water for 8–10 minutes, until the filling is fully cooked and the broth has formed inside.
Serve
- Mix the dipping sauce ingredients together.
- Serve immediately while hot with black vinegar and fresh ginger.
