Iranian Baghali Polo Recipe | Authentic Persian Dill and Fava Bean Rice
Baghali Polo is one of the most elegant and beloved rice dishes in Persian cuisine. Cooking Method
- Rinse the basmati rice several times until the water runs clear.
- Soak the rice in salted water for 30–60 minutes.
- Bring a large pot of salted water to a boil.
- Add the rice and cook for 6–7 minutes, until slightly tender but still firm.
- Add the fava beans during the final 2 minutes of boiling.
- Drain the rice and beans.
- Steep the saffron in the hot water for 10 minutes.
- Heat the oil and butter in the bottom of a heavy pot. Add lavash or potato slices if making Tahdig.
- Layer the rice with the chopped dill, repeating until all ingredients are used.
- Drizzle the saffron water over the top, cover the lid with a clean kitchen towel, and steam on low heat for 40–45 minutes.
- Gently fluff the rice before serving.
- Serve hot with lamb shanks, roasted chicken, grilled fish, or yogurt.
