Doner Kabab is a world-famous Turkish dish made with thinly sliced, marinated meat that is traditionally slow-roasted on a vertical rotisserie. This homemade version uses marinated chicken, lamb, or beef cooked in the oven or on a grill to achieve the same rich, juicy flavor. In a large bowl, mix yogurt, olive oil, garlic paste, paprika, cumin powder, and salt to prepare the marinade.
Add the thinly sliced meat and coat it evenly with the marinade.
Cover and refrigerate for at least 4 hours or overnight for the best flavor.
Preheat the oven to 200°C (390°F).
Arrange the marinated meat on a baking tray or thread it tightly onto skewers.
Roast for 25–30 minutes, turning halfway through, until the meat is fully cooked and lightly browned.
Slice the cooked meat into thin strips if needed and lightly pan-fry for 2–3 minutes to create crispy edges.
Serve hot in pita bread, wraps, or with rice, fresh salad, garlic sauce, and yogurt.
