Authentic Slovak Kapustnica Recipe |Traditional Sauerkraut Soup
Kapustnica is a traditional Slovak sauerkraut soup celebrated for its rich, smoky, and tangy flavors. A beloved dish during Christmas and winter holidays, it combines sauerkraut, smoked sausage, pork, dried mushrooms, onions, garlic, and aromatic spices in a hearty broth. Some regional variations also include prunes for a subtle sweetness. Slow-simmered to develop deep, comforting flavors, Kapustnica is typically served with crusty rye bread, making it a satisfying meal for family gatherings and festive occasions.
Cooking Method
- Heat the oil in a large pot over medium heat.
- Sauté the onion until softened, then add the garlic and cook for 30 seconds.
- Add the smoked pork and sausage, cooking for 5 minutes until lightly browned.
- Stir in the paprika, caraway seeds, and soaked mushrooms.
- Add the sauerkraut, bay leaves, and broth.
- Bring to a gentle boil, then reduce the heat to low.
- Simmer for 1½–2 hours, stirring occasionally, until the meat is tender and the flavors are well developed.
- Add the chopped prunes during the last 15 minutes of cooking if using.
- Remove the bay leaves and adjust the seasoning with salt and black pepper.
- Serve hot with a spoonful of sour cream and fresh rye bread.
