Cooking Method


  1.  Sprinkle the eggplant slices with salt and let them rest for 20–30 minutes to remove excess bitterness. Pat them dry. 
  2.  Heat the oil in a skillet and fry the eggplant until golden on both sides. Set aside on paper towels. 
  3.  In a large pot, heat the vegetable oil and sauté the onion until soft and lightly golden. 
  4.  Add the garlic and turmeric, cooking for 1 minute until fragrant. 
  5.  Add the beef or lamb and brown on all sides. 
  6.  Stir in the tomato paste and cook for 2–3 minutes to deepen its flavor. 
  7.  Add the chopped tomatoes and cook until softened. 
  8.  Pour in the beef broth, add the dried Persian limes if using, and season with black pepper and salt. 
  9.  Cover and simmer for 1½ hours, or until the meat is nearly tender. 
  10.  Gently place the fried eggplant into the stew and continue simmering for another 30–40 minutes, allowing the eggplant to absorb the sauce. 
  11.  Taste and adjust the seasoning if needed. 
  12.  Serve hot with steamed Persian saffron rice and garnish with fresh parsley.
