Tunisian Fricassé is a beloved street food consisting of soft, golden fried bread rolls filled with tuna, boiled potatoes, hard-boiled eggs, olives, harissa, and preserved lemon. Crispy on the outside and fluffy on the inside, these delicious sandwiches are a staple of Tunisian cuisine and are especially popular during Ramadan, family gatherings, and as a satisfying snack or lunch.  The homemade yeast dough is lightly fried until golden brown, creating a tender bread with a crisp exterior. Each roll is sliced open and generously stuffed with a flavorful combination of tuna, sliced potatoes, eggs, olives, and spicy harissa. Preserved lemon and fresh parsley add a bright, tangy finish that perfectly balances the rich filling.  Easy to customize with capers or extra vegetables, Tunisian Fricassé is traditionally served warm and enjoyed as a hearty meal on the go. Packed with bold Mediterranean flavors and satisfying textures, this classic sandwich is a true taste of Tunisia.

Cooking Method


  1. In a large bowl, combine the flour, yeast, sugar, and salt.
  2. Add the warm water and olive oil, then mix until a soft dough forms.
  3. Knead the dough for 8–10 minutes until smooth and elastic.
  4. Cover the bowl and let the dough rise in a warm place for about 1 hour, or until doubled in size.
  5. Divide the dough into 8 equal portions and shape each into an oval roll.
  6. Cover and let the rolls rest for 20 minutes.
  7. Heat the vegetable oil to 350°F (175°C) in a deep pot or fryer.
  8. Fry the dough rolls for 3–4 minutes per side until puffed and golden brown. Drain on paper towels.
  9. Slice each roll open without cutting all the way through. Spread harissa inside, then fill with tuna, potato slices, hard-boiled eggs, olives, preserved lemon, capers, and parsley.
  10. Serve immediately while warm for the best flavor and texture.
