Cooking Method
In a large bowl, combine the flour, yeast, sugar, and salt.
Add the warm water and olive oil, then mix until a soft dough forms.
Knead the dough for 8–10 minutes until smooth and elastic.
Cover the bowl and let the dough rise in a warm place for about 1 hour, or until doubled in size.
Divide the dough into 8 equal portions and shape each into an oval roll.
Cover and let the rolls rest for 20 minutes.
Heat the vegetable oil to 350°F (175°C) in a deep pot or fryer.
Fry the dough rolls for 3–4 minutes per side until puffed and golden brown. Drain on paper towels.
Slice each roll open without cutting all the way through. Spread harissa inside, then fill with tuna, potato slices, hard-boiled eggs, olives, preserved lemon, capers, and parsley.
Serve immediately while warm for the best flavor and texture.
