Shikampuri Kabab
Shikampuri Kabab is a royal Hyderabadi delicacy made with finely minced mutton, aromatic spices, and a flavorful stuffing of creamy yogurt and herbs. Known for its soft texture and rich taste, these kababs are shallow-fried until golden brown, making them a perfect appetizer for festivals, parties, or special family dinners. Serve them hot with mint chutney, onion rings, and lemon wedges.
Cooking Method
- In a large bowl, combine the minced mutton, onion, ginger-garlic paste, green chilies, garam masala, and salt.
- Mix thoroughly until the ingredients are well combined, then refrigerate for 30–45 minutes.
- Divide the meat mixture into equal portions and flatten each portion into a small disc.
- Place a small spoonful of hung curd in the center and carefully seal the edges to form a round kabab.
- Heat a little oil or ghee in a non-stick frying pan over medium heat.
- Shallow-fry the kababs for 3–4 minutes on each side until they become golden brown and fully cooked.
- Remove the kababs and drain them on paper towels to remove excess oil.
- Garnish with fresh coriander leaves and serve hot with mint chutney, onion rings, and lemon wedges.
