Pierogi Recipe | Authentic Polish Dumplings with Potato & Cheese Filling
Pierogi are one of Poland's most beloved comfort foods, featuring tender homemade dumplings filled with creamy mashed potatoes, cheese, and savory seasonings. Cooking Method
Prepare the Filling
- Heat the butter in a skillet over medium heat.
- Sauté the diced onion until soft and golden.
- In a bowl, combine the mashed potatoes, cheese, cooked onions, salt, and black pepper.
- Mix until smooth and allow the filling to cool completely.
Make the Dough
- In a large bowl, combine the flour and salt.
- Add the egg, sour cream, melted butter, and warm water.
- Mix until a dough forms.
- Knead for 8–10 minutes until smooth and elastic.
- Cover the dough and let it rest for 30 minutes.
Assemble the Pierogi
- Roll the dough to about ⅛ inch (3 mm) thick.
- Cut out circles approximately 3 inches in diameter.
- Place about 1 tablespoon of filling in the center of each circle.
- Fold the dough over to form a half-moon shape.
- Press the edges firmly with your fingers or a fork to seal.
Cook
- Bring a large pot of salted water to a gentle boil.
- Add the pierogi in batches.
- Cook until they float, then continue cooking for 2–3 minutes.
- Remove with a slotted spoon.
Optional Pan-Fry
- Melt butter in a skillet over medium heat.
- Fry the boiled pierogi for 2–3 minutes per side until lightly golden.
- Serve hot with sour cream, caramelized onions, melted butter, and chopped parsley.
