Har Gow Recipe | Authentic Chinese Shrimp Dumplings (Dim Sum Style)
Har gow, also known as Crystal Shrimp Dumplings, are one of the most iconic dishes served in traditional Cantonese dim sum restaurants. These elegant dumplings are famous for their delicate, translucent wrappers and juicy shrimp filling. Every bite delivers a combination of tender, slightly chewy wrapper and succulent shrimp seasoned with sesame oil, ginger, bamboo shoots, and subtle Chinese spices.
Originating in Guangdong Province, Har Gow has become a staple of Cantonese cuisine and is considered one of the essential dishes on any dim sum menu. Skilled chefs traditionally fold each dumpling with 10 to 13 pleats, creating its signature crescent shape. The wrapper, made from wheat starch and tapioca starch, becomes beautifully translucent after steaming while remaining soft and slightly chewy.
The filling is intentionally simple to highlight the fresh sweetness of the shrimp. Crunchy bamboo shoots, aromatic ginger, green onions, sesame oil, and a touch of white pepper complement the seafood without overpowering its natural flavor. Har Gow is traditionally served hot with soy sauce, black vinegar, or chili oil as a dipping sauce.
Although making crystal wrappers requires a little practice, homemade Har Gow is incredibly rewarding and delivers authentic restaurant-quality results. Cooking Method
Prepare the Filling
- In a bowl, combine the chopped shrimp, bamboo shoots, green onions, ginger, soy sauce, oyster sauce, sesame oil, sugar, white pepper, and cornstarch.
- Mix well until evenly combined.
- Refrigerate the filling for 15 minutes.
Make the Wrapper
- Mix the wheat starch, tapioca starch, and salt in a heatproof bowl.
- Carefully pour the boiling water over the starch mixture while stirring continuously.
- Add the vegetable oil and knead until a smooth, soft dough forms.
- Cover the dough with a damp towel to prevent it from drying out.
Assemble the Dumplings
- Divide the dough into small balls.
- Roll each ball into a thin 3–4 inch circle.
- Place about 1 tablespoon of shrimp filling in the center.
- Fold into a half-moon shape and pleat the edges to seal securely.
Steam
- Line a bamboo steamer or steaming basket with parchment paper or cabbage leaves.
- Arrange the dumplings without touching each other.
- Steam over rapidly boiling water for 6–8 minutes, until the wrappers become translucent and the shrimp are fully cooked.
Serve
- Mix the dipping sauce ingredients together.
- Serve the Har Gow immediately while hot.
