South Korean Sundubu Jjigae Recipe | Authentic Spicy Soft Tofu Stew
Sundubu-jjigae is a classic comfort dish from South Korea. This hearty stew is made with silky soft tofu, vegetables, seafood or meat, and a rich, spicy broth flavored with gochugaru, garlic, and Korean seasonings. Traditionally served bubbling hot in a stone pot with a freshly cracked egg, Sundubu Jjigae is loved for its comforting warmth, bold flavors, and delicate tofu texture.
Perfect for lunch or dinner, this authentic Korean recipe pairs beautifully with steamed rice and a variety of Korean side dishes (banchan). It's easy to customize with beef, pork, seafood, or mushrooms for a delicious homemade meal.
Cooking Method
- Heat the vegetable oil in a pot over medium heat.
- Add the garlic and cook until fragrant.
- Stir in the pork, beef, or seafood and cook until lightly browned.
- Add the gochugaru and gochujang, stirring for 30 seconds.
- Pour in the broth and bring to a gentle boil.
- Add the onion, zucchini, and mushrooms. Simmer for 8–10 minutes.
- Gently add the soft tofu in large pieces without breaking it too much.
- Simmer for another 5 minutes.
- Stir in the soy sauce and sesame oil, then season with salt and pepper.
- Crack an egg into the center of the stew, if desired, and cook for 1–2 minutes.
- Garnish with green onions, sesame seeds, or fresh chili slices.
- Serve immediately while bubbling hot with steamed rice.
