Boil the potatoes, peel them, and cut them into bite-sized cubes.
Heat mustard oil in a pan and add cumin seeds and whole dried red chilies.
Add turmeric powder and chopped green chilies, stirring for a few seconds.
Add the potato cubes and season with red chili powder and salt.
Toss well until the potatoes are evenly coated with the spices.
Cook for 5–7 minutes until the edges become slightly crispy.
Garnish with fresh coriander leaves and serve hot with puri, raita, or Kafuli.
