Cooking Method


  1.  Pat the chicken thighs dry and lightly season with salt and black pepper. 
  2.  Heat the vegetable oil in a large skillet over medium-high heat. 
  3.  Place the chicken skin-side down (or smooth side if skinless) and cook for 5–6 minutes until golden brown. 
  4.  Flip the chicken and cook for another 4–5 minutes until nearly cooked through. 
  5.  In a small bowl, combine the soy sauce, mirin, sake, brown sugar, honey, garlic, and grated ginger. 
  6.  Pour the teriyaki sauce into the skillet with the chicken. 
  7.  Reduce the heat to medium and simmer for 5–7 minutes, frequently spooning the sauce over the chicken as it thickens. 
  8.  Continue cooking until the sauce becomes glossy and coats the chicken evenly. 
  9.  Slice the chicken into strips. 
  10.  Serve over steamed rice with extra sauce drizzled on top. Garnish with sesame seeds and sliced green onions.
