Cooking Method
- Wash and soak the basmati rice for 30 minutes.
- Fry the sliced onions until golden brown. Remove half for garnish.
- Add the whole spices to the remaining oil and sauté until fragrant.
- Add the ginger-garlic paste and cook for 1 minute.
- Add the chicken and cook until lightly browned.
- Stir in the tomatoes, yogurt, turmeric, chili powder, cumin, biryani masala, green chilies, and salt.
- Cover and simmer until the chicken is tender and the gravy thickens.
- Meanwhile, boil the soaked rice until about 70% cooked, then drain.
- Layer the partially cooked rice over the chicken mixture.
- Top with fried onions, cilantro, mint, and saffron milk.
- Cover tightly and cook on low heat (dum) for 20–25 minutes.
- Gently fluff the biryani before serving.
