South Korean Kimchi Stew (Kimchi Jjigae) Recipe | Authentic Spicy Kimchi Soup
Kimchi-jjigae is one of the most beloved comfort foods in South Korea. This hearty stew is made with well-fermented kimchi, tender pork belly, tofu, onions, and a rich broth seasoned with gochugaru and gochujang. The longer-fermented kimchi gives the stew its signature tangy, spicy, and deeply umami flavor. Warm, comforting, and packed with bold Korean flavors, Kimchi Jjigae is a staple in Korean households.
Perfect for lunch or dinner, this authentic Korean stew is traditionally served bubbling hot with steamed rice and a variety of Korean side dishes (banchan).
