Cooking Method
Heat the vegetable oil in a large pot over medium-high heat.
Add the goat meat and brown on all sides.
Stir in the onion and cook until softened.
Add the garlic and ginger, then cook for 1 minute.
Add the tomatoes and tomato paste, stirring until the tomatoes soften.
Mix in the curry powder, paprika, cumin, turmeric, salt, and black pepper.
Pour in the beef stock and bring to a boil.
Reduce the heat, cover, and simmer for 1½–2 hours, or until the goat meat is tender.
Stir occasionally and add more stock if needed.
Finish with the lime juice and adjust the seasoning to taste.
