Cooking Method
- Cook the Japanese short-grain rice according to the package directions and keep it warm.
- Heat the vegetable oil in a large skillet over medium heat.
- Add the sliced onion and cook for 4–5 minutes until softened.
- Stir in the dashi stock, soy sauce, mirin, sake, sugar, and grated ginger. Bring to a gentle simmer.
- Add the thinly sliced beef, separating the slices with chopsticks or tongs.
- Simmer for 5–7 minutes until the beef is fully cooked and tender, occasionally skimming off any foam.
- Taste the broth and adjust the seasoning if needed.
- Divide the cooked rice among four serving bowls.
- Spoon the beef, onions, and a little of the cooking broth over each bowl of rice.
- Garnish with sliced green onions, pickled red ginger, sesame seeds, and a soft-poached or onsen egg if desired. Serve immediately.
