Cooking Method
- Rinse the rice thoroughly and soak it for 20 minutes, then drain.
- Bring the milk to a gentle boil in a heavy-bottomed pot.
- Add the rice and crushed cardamom pods.
- Simmer over low heat for 35–45 minutes, stirring frequently to prevent sticking.
- Once the rice is tender and the mixture has thickened, stir in the sugar.
- Add the almonds, pistachios, raisins, and saffron, if using.
- Cook for another 5–10 minutes until creamy.
- Stir in the rose water or kewra water, if desired.
- Remove from the heat and allow the kheer to cool slightly.
- Serve warm or refrigerate until chilled. Garnish with additional nuts and saffron before serving.
