 Bánh Bột Lọc is a traditional Vietnamese dumpling made from chewy, translucent tapioca dough filled with succulent shrimp and savory pork belly. Originating in Huế, Central Vietnam, this beloved specialty is known for its unique texture, delicate appearance, and rich, umami-packed filling. The dumplings are either wrapped in banana leaves for added aroma or served unwrapped, then paired with a tangy Vietnamese fish sauce dipping sauce that perfectly complements every bite.

Made with simple ingredients yet full of authentic flavor, Bánh Bột Lọc is commonly enjoyed as an appetizer, snack, or light meal. Its combination of soft, chewy dough, juicy shrimp, tender pork, and aromatic seasonings makes it one of Vietnam's most iconic traditional dumplings and a favorite among lovers of Vietnamese cuisine. 

Cooking Method


  1. Sauté the garlic and shallot in oil until fragrant.
  2. Add the pork belly and cook for 5 minutes.
  3. Add the shrimp, fish sauce, sugar, and black pepper. Cook until the shrimp are just done, then let the filling cool.
  4. Mix the tapioca starch with boiling water to form a smooth, pliable dough.
  5. Divide the dough into small portions and flatten each into a circle.
  6. Place a shrimp and a little pork filling in the center, then fold and seal the dumpling.
  7. Wrap in banana leaves if desired.
  8. Steam for 15–20 minutes, until the dumplings become translucent.
  9. Mix all the dipping sauce ingredients together.
  10. Serve hot with the fish sauce dipping sauce.
