Authentic Neapolitan Pizza Dough Recipe | Traditional Italian Pizza Crust
Neapolitan Pizza Dough is the foundation of authentic Italian pizza, known for its light, airy texture, soft interior, and beautifully blistered crust. Made with just four simple ingredients—high-protein flour, water, salt, and yeast—this traditional dough develops exceptional flavor through a slow fermentation process. Perfect for baking in a wood-fired pizza oven or a very hot home oven, Neapolitan pizza dough creates the classic chewy, tender crust that pairs beautifully with fresh tomato sauce, mozzarella, basil, and your favorite toppings.
Cooking Method
- In a large bowl, combine the warm water and yeast.
- Gradually add the flour, mixing until a rough dough forms.
- Add the salt and knead for 10–12 minutes until smooth and elastic.
- Cover the dough and let it rest for 2 hours at room temperature.
- Divide into 4 equal dough balls.
- Place the dough balls in lightly oiled containers, cover, and refrigerate for 18–24 hours.
- Remove the dough from the refrigerator 2 hours before baking.
- Stretch each dough ball gently by hand into a 10–12-inch round without using a rolling pin.
- Add your favorite pizza sauce, cheese, and toppings.
- Bake at 850–900°F (450–480°C) in a pizza oven for 60–90 seconds, or at the highest temperature in a home oven for 7–10 minutes.
