Cream Puffs Recipe | Light, Airy Choux Pastry Filled with Vanilla Cream

Cooking Method
Make the Choux Pastry

- Add the flour all at once and stir vigorously until a smooth dough forms and pulls away from the sides of the pan.
- Cook the dough for 1–2 minutes, stirring constantly.
- Transfer the dough to a mixing bowl and let it cool for 5 minutes.
- Beat in the eggs one at a time until the dough becomes smooth, glossy, and pipeable.
- Pipe or spoon rounds of dough onto the prepared baking tray, leaving space between each.
- Bake for 30–35 minutes, until puffed and golden brown. Do not open the oven during baking.
- Cool completely on a wire rack.
Make the Pastry Cream
- Heat the milk in a saucepan until just steaming.
- In a bowl, whisk together the sugar, egg yolks, and cornstarch.
- Slowly pour the warm milk into the egg mixture while whisking continuously.
- Return the mixture to the saucepan and cook over medium heat until thickened.
- Remove from the heat and stir in the butter and vanilla extract.
- Cover with plastic wrap directly on the surface and chill completely.
Assemble
- Slice each cream puff in half or poke a small hole in the bottom.
- Pipe the chilled pastry cream into each shell.
- Dust generously with powdered sugar or drizzle with melted chocolate before serving.
