Romanian Sarmale Recipe | Traditional Cabbage Rolls
Sarmale is Romania's iconic national dish, loved for its rich flavors, comforting texture, and deep cultural significance. These delicious cabbage rolls are made by wrapping tender pickled cabbage leaves around a savory filling of ground pork, rice, onions, herbs, and aromatic spices. The rolls are slowly simmered in a flavorful tomato sauce with smoked meat, creating a hearty meal that is both tender and incredibly satisfying.
Sarmale is a centerpiece of Romanian cuisine and is traditionally prepared for Christmas, Easter, weddings, family celebrations, and Sunday gatherings. The slow cooking process allows the cabbage leaves to become meltingly tender while the filling absorbs the rich tomato broth and smoky flavors. Many Romanian families pass down their own cherished recipes from generation to generation, making Sarmale a symbol of home, tradition, and hospitality.
Although pork is the classic choice, variations may include beef, turkey, or a combination of meats. Smoked bacon or smoked ribs are often layered between the cabbage rolls to add extra depth and richness. Sarmale is traditionally served with creamy sour cream, warm crusty bread, hot polenta (Mămăligă), and fresh chili peppers for an authentic Romanian dining experience.
Whether you're exploring Eastern European cuisine or preparing a festive family meal, this authentic Romanian Sarmale recipe delivers comforting flavors, wholesome ingredients, and timeless tradition in every bite.
Cooking Method
- If using fresh cabbage, blanch the leaves in boiling water until soft. Trim the thick stems. If using pickled cabbage, rinse gently and separate the leaves.
- Heat the oil in a skillet and sauté the onion until translucent.
- Mix the onion with the ground pork, ground beef (if using), uncooked rice, tomato paste, paprika, thyme, dill, salt, and black pepper.
- Place about 2 tablespoons of filling in each cabbage leaf, fold in the sides, and roll tightly.
- Layer some chopped cabbage and smoked bacon in the bottom of a large pot.
- Arrange the cabbage rolls seam-side down in layers, adding more smoked bacon between layers if desired.
- Pour the tomato sauce and broth over the rolls, then add the bay leaves.
- Cover and simmer on low heat for 2½–3 hours, until the cabbage is tender and the rice is fully cooked.
- Let the Sarmale rest for 15 minutes before serving.
- Serve hot with sour cream, fresh dill, and warm polenta for an authentic Romanian meal.
