Authentic Ukrainian Holubtsi Recipe | Traditional Stuffed Cabbage Rolls
Ukrainian Holubtsi are traditional stuffed cabbage rolls made by wrapping tender cabbage leaves around a savory filling of ground pork, beef, rice, onions, and aromatic herbs. Slowly baked or simmered in a rich tomato sauce, Holubtsi are one of Ukraine's most cherished comfort foods and are commonly served during Christmas, Easter, weddings, and family gatherings. The long, gentle cooking process creates tender cabbage leaves and juicy, flavorful filling, making this classic dish a comforting centerpiece that is often enjoyed with sour cream and fresh bread.
Cooking Method
- Bring a large pot of water to a boil and carefully blanch the cabbage until the leaves soften. Remove and separate 12–16 large leaves.
- Trim the thick stem from each cabbage leaf.
- Heat the butter in a skillet and sauté the onion until soft. Add the garlic and cook for 1 minute.
- In a large bowl, combine the ground pork, ground beef, cooked rice, sautéed onion mixture, egg, paprika, dill, salt, and black pepper.
- Place about 2–3 tablespoons of filling on each cabbage leaf, fold in the sides, and roll tightly.
- Arrange the cabbage rolls seam-side down in a large baking dish or Dutch oven.
- Mix the tomato sauce, broth, tomato paste, bay leaves, and sugar, then pour over the cabbage rolls.
- Cover tightly and bake at 350°F (175°C) for 1½–2 hours, or simmer gently on the stovetop until the cabbage is tender.
- Remove the bay leaves and allow the rolls to rest for 10 minutes.
- Garnish with fresh dill and serve hot with sour cream and crusty bread.
