Cooking Method

- Cover and refrigerate for 4–8 hours, preferably overnight.
- Soak wooden skewers in water for 30 minutes if using.
- Thread the pork, onions, bell peppers, and tomatoes alternately onto the skewers.
Grill
- Preheat a charcoal grill or gas grill to medium-high heat.
- Lightly oil the grill grates.
- Grill the skewers for 12–15 minutes, turning every 3–4 minutes until evenly browned.
- Continue grilling until the pork reaches an internal temperature of 145°F (63°C).
- Remove from the grill and allow the skewers to rest for 5 minutes before serving.
