Cooking Method
- Toss the beef cubes with the flour, salt, and 1 teaspoon of black pepper.
- Heat the olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat.
- Brown the beef on all sides, then transfer to a plate.
- In the same pot, sauté the onion, garlic, and celery until softened.
- Stir in the tomato paste and Worcestershire sauce.
- Return the beef to the pot and pour in the beef broth.
- Add the thyme, bay leaves, and the remaining black pepper. Bring to a boil.
- Reduce the heat to low, cover, and simmer for 1½ hours.
- Add the carrots and potatoes, then cook for another 25–30 minutes, or until the vegetables are tender and the beef is fork-tender.
