Rajasthani Gatte Ki Sabzi
Rajasthani Gatte Ki Sabzi is a classic vegetarian dish made with soft gram flour (besan) dumplings simmered in a rich, spiced yogurt-based gravy. Cooking Method
- Prepare a dough by mixing gram flour (besan), spices, ghee, and yogurt. Roll into long cylinders.
- Boil the dough rolls in water until cooked, then slice them into bite-sized pieces.
- Heat ghee or oil in a pan and add cumin seeds and asafoetida.
- Add yogurt mixed with spices and cook on low heat while stirring continuously.
- Add water to achieve the desired gravy consistency and simmer.
- Stir in the cooked gatte (besan dumplings) and cook for 8–10 minutes so they absorb the flavors.
- Garnish with fresh coriander and serve hot with roti, paratha, or rice.
