Hungarian Töltött Káposzta Recipe | Authentic Stuffed Cabbage Rolls
Töltött káposzta is one of Hungary’s most treasured traditional dishes, featuring tender cabbage leaves wrapped around a savory filling of seasoned ground pork, rice, onions, and paprika, then slowly simmered in a rich tomato and sauerkraut sauce. This comforting meal is a staple at Christmas, Easter, weddings, and family celebrations, but it’s equally enjoyed throughout the colder months as a hearty homemade dinner.
The secret to authentic Hungarian Töltött Káposzta is its slow cooking process. Sweet cabbage leaves become melt-in-your-mouth tender while absorbing the smoky, paprika-infused flavors of the sauce. The pork filling stays juicy and flavorful thanks to garlic, onions, rice, and Hungary’s famous sweet paprika. Sauerkraut adds a pleasantly tangy contrast, while smoked sausage and bacon enrich the stew with deep, smoky flavor.
Many Hungarian families prepare this dish a day in advance because the flavors continue to develop overnight, making it even more delicious when reheated. It is traditionally served with crusty bread, sour cream, or mashed potatoes, making it a complete and satisfying comfort meal.
Whether you're exploring authentic Hungarian cuisine or recreating a cherished family recipe, Töltött Káposzta delivers rich, rustic flavors and timeless homemade comfort in every bite.

- Fold in the sides and roll tightly.
Prepare the Sauce
- Heat the oil in a large Dutch oven.

- Spread half of the sauerkraut on the bottom of the pot.
Cook
- Arrange the cabbage rolls seam-side down over the sauerkraut.
- Top with the remaining sauerkraut.
- Pour the sauce over everything.
