Indonesian Ayam Goreng Recipe | Authentic Indonesian Fried Chicken
Ayam goreng is one of Indonesia’s most popular traditional dishes, celebrated for its incredibly flavorful meat, crispy golden exterior, and aromatic blend of Indonesian spices. Cooking Method
- Blend the shallots, garlic, ginger, galangal, turmeric, coriander, and candlenuts into a smooth spice paste.
- Heat 2 tablespoons of oil in a large pot over medium heat.
- Fry the spice paste for 3–4 minutes until fragrant.
- Add the lemongrass, kaffir lime leaves, and bay leaves.
- Place the chicken into the pot and coat well with the spices.
- Pour in the coconut water (or coconut milk).
- Add the salt, white pepper, and sugar.
- Bring to a gentle boil.
- Reduce the heat and simmer for 35–40 minutes, until the chicken is fully cooked and the liquid has mostly evaporated.
- Remove the chicken and allow it to cool slightly.
- Heat enough oil in a deep pan to 350°F (175°C).
- Fry the chicken for 5–7 minutes, or until golden brown and crispy.
- Drain on paper towels.
- Garnish with fried shallots.
- Serve hot with steamed rice, sambal, cucumber, tomato, and lime wedges.
