Filipino Sinigang Recipe | Authentic Traditional Tamarind Sour Soup
Filipino Sinigang is a traditional sour soup and one of the Philippines' most beloved comfort foods. Known for its signature tangy broth made with tamarind, Sinigang is commonly prepared with pork, beef, shrimp, or fish and simmered with fresh vegetables such as radish, eggplant, okra, tomatoes, water spinach (kangkong), and long green peppers. Cooking Method
- Place the pork and water in a large pot and bring to a boil.
- Skim off any foam that rises to the surface.
- Add the onion and tomatoes, then reduce the heat and simmer for 45–50 minutes, or until the pork is tender.
- Stir in the tamarind soup mix until fully dissolved.
- Add the daikon radish and cook for 5 minutes.
- Add the eggplant, okra, and green chilies, then simmer for another 5–7 minutes.
- Season with fish sauce, salt, and black pepper to taste.
- Add the water spinach and cook for 1–2 minutes, just until wilted.
- Taste and adjust the seasoning or sourness if needed.
- Serve hot with steamed white rice.
