Authentic Serbian Sarma Recipe | Traditional Stuffed Cabbage Rolls
Serbian Sarma is a traditional Balkan comfort food consisting of fermented cabbage leaves stuffed with a flavorful mixture of ground pork, beef, rice, onions, and aromatic spices. Slowly simmered in a rich tomato-based broth with smoked meat or bacon, Sarma develops a deep, savory flavor that becomes even better the next day. Cooking Method
- Rinse the sour cabbage leaves briefly if they are very salty, then trim the thick stems.
- Heat the oil in a skillet and sauté the onion until softened. Add the garlic and cook for 1 minute.
- In a large bowl, combine the ground pork, ground beef, rice, sautéed onion mixture, paprika, black pepper, and salt.
- Place about 2–3 tablespoons of filling onto each cabbage leaf and roll tightly, folding in the sides to seal.
- Arrange the smoked bacon or pork ribs in the bottom of a large pot.
- Layer the cabbage rolls seam-side down in the pot.
- Mix the tomato puree, beef broth, bay leaves, and paprika, then pour over the cabbage rolls.
- Bring to a gentle boil, reduce the heat to low, cover, and simmer for 2 to 2½ hours, until the cabbage is tender and the filling is fully cooked.
- Carefully remove the cabbage rolls and discard the bay leaves.
- Garnish with chopped parsley and serve hot with mashed potatoes, crusty bread, or a spoonful of sour cream.
