Paneer Korma (North India)

Cooking Method
- Soak cashews in warm water for 15 minutes and blend them into a smooth paste.
- Heat ghee or oil in a pan and sauté onions until golden, then add ginger-garlic paste.
- Add tomato puree and cook with turmeric, coriander powder, red chili powder, and garam masala until the oil separates.
- Stir in the cashew paste, yogurt, and fresh cream, cooking on low heat until the gravy becomes smooth and creamy.
- Add paneer cubes and gently mix to coat them in the rich gravy.
- Simmer for 5–7 minutes, adjusting the consistency with a little water if needed.
- Garnish with fresh coriander, cream, and chopped cashews before serving hot.
